CHOIX ÉVIDENT

Our proprietary blend of classic red varietals are sourced from select AVA’s of the Columbia Valley. Deep ruby color, complex notes of dark fruits, anise, cedar and earth. A polished and silky texture reveals an astonishingly memorable finish.

ENCHANTÉ

This wine captures the magic of La Caille. Light pale straw in color with aromas of white flesh fruits, melon and honeysuckle accompanied by subtle floral notes. A bright palate of tangy citrus-tangerine and Meyer lemon zest is followed by wet stone and dried fig, leading to a mineral-laced bracing finish. It is liquid sunshine in a glass!

CABERNET

This Napa Valley Cabernet Sauvignon is deep purple in color with hints of blue and black fruits. The palate exhibits   black cherry, boysenberry, chocolate and tobacco followed by a structured balance of tannins and oak with a smooth, long finish.

PINOT NOIR

This wine displays a well-balanced classic character. Bright in color, with a perfumed nose of raspberry and sassafras. The medium palate exhibits crushed cherries, subtle spice and cedar, with fine-grained silky tannins, followed by a lengthy finished of dried cherry and tea leaves. A fine expression of hallmarks of Russian River Valley Pinot Noir.

CHATEAU ROSÉ

A blend of our vineyard grapes. Vibrant pink in color. Hints of Meyer lemon and strawberries. A palate of blueberries and a hint of spice. The perfect wine for a hot summer night, or cozied up to the fireplace.

We are proud to offer 4 Chateau La Caille Wines for tasting including Pinot Noir, Choix Évident, Cabernet Sauvignon and our very own estate-grown wine Seyval Blanc.

Château La Caille

The Wine

Our magnificent estate vineyard was planted in 1986 with Seyval Blanc and is located at the mouth of Little Cottonwood Canyon at an elevation of 5,350 feet above sea level.

The early morning sunlight is unobscured by the mountains due to the location of the vineyard at the mouth of the canyon, allowing the vines to enjoy the sunlight from early morning to late in the evening.

 

The soils of the vineyard are composed of glacial deposits, which combined with the gentle slope provide excellent drainage for the for the vines’ root systems.

During the ripening stage, the high altitude provides the necessary low nighttime temperature which allows the grapes to ripen slowly. This enables the vines to produce fully matured, well balanced grapes, therefore retaining their natural varietal fruit flavors and natural acidity.

By approaching each vineyard block individually, our goal is to harvest when the flavors have reached their peak and the tannins are at their softest.
